Three years ago, a new restaurant and concept burst onto the Shanghai fine dining scene and raised it to new heights. The venerable Mr & Mrs Bund, the dining institution which celebrates its 3rd birthday this month, has since won the hearts and bellies of food loving residents and visitors alike.

It is easy to understand why.

The food here is innovative, vibrant, with a no fuss attitude. Alice in Wonderland-inspired interiors and quirky uniformed waitstaff add charm and playfulness to the space. Ultimately, it is about having fun with it all.

The man behind this creative genius is Chef Paul Pairet, a true innovator of avant-garde cuisine. Pioneering original techniques which play on texture, temperature and food chemistry—there’s always an element of surprise to his dishes. In a city where Foie Gras is featured on every major restaurant menu, Pairet manages to do one better. His Foie Gras Light Crumble topped with a generous layer of hazlenuts, raisin and toffee is a textural delight and a perfect melding of sweet and savoury flavours.

Signature dishes such as the Jumbo Shrimp cooked in a Jar, is beautifully infused with lemongrass, citrus and vanilla, and served in the jar it was cooked in. Each bite of the house-smoked Norwegian Salmon with Jasmine Tea reveals wonderful smoky notes and subtle hints of fragrant Jasmine.

The restaurant’s famous Lemon & Lemon Tart elevates the classic dessert to new levels. A whole lemon is hollowed out and candied for 72 hours, then filled with lemon sorbet, lemon curd and citrus segments. A long stick of Sablé completes the minimalistic edible sculpture.

More recently, Pairet has been busy with his exciting new project, UltraViolet by Paul Pairet. A dream project 15 years in the making, UltraViolet is an entire new ball game. The 10-seater multi sensorial restaurant features a set menu of 24 dishes presented over 3 stages: Simplicity – presenting pure and original flavours of quality ingredients; Avant-Garde – a whole new realm of creation; and Cuisine Bourgeois – a trip down memory lane, classical dishes and old world techniques.
